We Made Pongu Lumpia in the Air Fryer!
We just cracked the code! We made Pongu Lumpia, one of my favorite sweets from Walt Disney World, in the air fryer!
This recipe was adapted from Pongu Lumpia in The Unofficial Disney Parks Cookbook.
Pongu Lumpia
We love food and we love to travel. It’s hard to pick a favorite, but we recently narrowed down our favorite sweets at each Disney park. At Animal Kingdom, the pongu lumpia came out on top! These crispy spring rolls are filled with pineapple and cream cheese. They have the perfect level of sweetness and the soft filling balances out the crispy shell.
This recipe for pongu lumpia is unique because it doesn’t require an oil fryer. I didn’t experience as much leakage during cooking and there’s no oil to clean up afterward.
Pongu Lumpia Recipe
Ingredients
- 1 egg
- 1 teaspoon warm water
- 12 spring roll wrappers
- 8 ounces cream cheese, softened
- 1 20-ounce can crushed pineapple, drained
- 2/3 cup sugar
- 1/4 cup vegetable oil or cooking spray
Directions
- In a small bowl, beat egg and add warm water.
- In another bowl, combine sugar and cream cheese.
Mix well. - Brush two sides of a single spring roll wrapper with the egg wash.
Spread the sweetened cream cheese mixture onto the rest of the spring roll wrapper, avoiding the egg wash.
Top with a scoop of pineapple.
Fold in the corner without egg wash, then fold in the sides.
Finally, fold down the corner with egg wash.
Seal closed by pressing down gently on the seams.
Place seam-side down on a baking sheet. - Repeat with the remaining spring roll wrappers.
- Freeze the rolls on the baking sheet for at least one hour.
- To cook, brush with oil or spray with cooking spray cook for 5 minutes at 350°.
Turn and cook for 5 minutes more.
Tips
The wrapper should be brown and crispy when the lumpia is cooked through. Be sure to flip halfway through.
After freezing for one hour, transfer any unused lumpia to a sealed container for storage.
